2/3 cup unsweetened cocoa powder
1 1/4 cup flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
3/4 cup maple sugar
1 egg
1 egg yolk
1/2 cup melted butter
1 tsp vanilla
2 cups grated zucchini
1 cup semisweet chips
1 TBSP maple sugar
1 TBSP cinnamon
Pinch of salt
Preheat oven to 350
Combine cocoa powder, flour, baking soda, cinnamon and salt in bowl. In another large bowl mix eggs and sugar for one minute and then add the vanilla and butter.
Next fold in zucchini followed by slowly adding the flour mixture. Lastly add chocolate chips to mix.
In a separate small bowl mix tbsp of Great River Maple Sugar, cinnamon and salt
In greased muffin pan fill each spot 3/4 full with batter. Sprinkle the top of each muffin with maple sugar mixture.
Bake 15-20 min or until toothpick comes out clean.
