- 4 Tbsp Yellow Curry powder
- 1 Tbsp Maple Sugar
- 2 Eggs, beaten
- 1 1/2 Cup Crackers, ground
- 2 Fish Fillets (medium to large)
- Oil for frying
Heat oil in frying pan big enough to cook fish evenly.
In first shallow bowl combine curry and maple sugar and in a second shallow bowl beat 2 eggs. Put crackers in a large zip-lock bag and use a rolling pin to break the crackers into small pieces and then pour the ground crackers into a third shallow bowl.
Coat each fillet in order (curry mix, egg, crackers) and then fry. The picture shows the fish served with avocado and white rice.
