Pizza Dough (your own recipe or store bought)
1 Tbsp Olive Oil
1-2 Garlic cloves, thinly sliced
1/2 Sweet Onion, finely chopped
2 tsp Maple Sugar
1 pkg Prosciutto
2 Handfuls of Arugula
6-8 Figs, sliced
1/2 C Parmesan, shredded
1/4 C Balsamic Vinegar
1/4 C Maple Syrup (preferably Robust)
In a small sauce pan combine and simmer the maple syrup and balsamic vinegar on low to medium heat. Stir constantly to prevent it from burning until reduced by half.
Roll out dough, brushing with olive oil and then sprinkle garlic and onions onto pizza. Evenly distribute prosciutto and then sprinkle with maple sugar. Next add your sliced figs.
Bake at 425' until the crust is nearly cooked, about 15 minutes. Remove pizza and add arugula and Parmesan and cook for a couple more minutes, until the cheese starts to melt. Remove from oven and drizzle the maple balsamic sauce over entire pizza.
*This recipe can also be cooked in a smoker for added depth of flavor.
