5 Lbs Pork Belly
1/4 Cup Salt
1/2 Cup Maple Syrup
3 Tbsp Assorted Chili Peppers (Nanami Togarashi)
Combine salt, maple syrup, smoked paprika and chili peppers in a bowl. Rub mixture on pork belly, cover and refrigerate for 10 days.
Smoke at 250F until the pork belly is 175F.
