Maple Orange Duck

 

2 Oranges, 1 zested and both juiced

1 Slice of Orange, rind removed

6 Szechuan Peppers

1/2 Cup Maple Syrup

1/2 Cup Bourbon

2 Duck Breasts

1 tsp Butter

Salt and Pepper

 

Combine orange zest, orange juice, orange slice, szechuan peppers, maple syrup and bourbon in a saucepan and simmer for 20 min.

 

Salt and pepper each side of the duck breast. Melt butter in skillet and cook duck on each side for about 7 min.

 

Pour sauce over duck right before serving.
