Maple Muffins


3 Ripe Bananas

1/2 C Brown Sugar

1/4 C Maple Syrup

1/6 C Coconut Oil, melted

1/6 C Applesauce

1 Egg

1 Tsp Vanilla


1 1/2 C Flour

3/4 C Oatmeal, old fashioned

2 Tsp Cinnamon

1 Tsp Baking Soda

Optional: 1/2 C Nuts, chopped

1/2 C Coconut, shredded

1/2 C Mini Chocolate Chips

3 Tsp Maple Sugar

Preheat oven to 350'.

Combine bananas, brown sugar, maple syrup, melted coconut oil, applesauce, egg and vanilla in mixer. While wet ingredients are mixing, use a separate bowl to combine flour, oatmeal, cinnamon and baking soda.

Gradually add dry ingredients to mixer.  Once everything is thoroughly mixed add the optional ingredient(s) of your preference and mix for another minute or two. Scoop batter into muffin tin, should make 12 muffins. Top each muffin with maple sugar or cinnamon. 

Bake for about 20 minutes depending on the size of the muffin tin. To be sure test with a toothpick, which should come out clean.  

We love these muffins!! We often prepare these muffins weekly, they are a delicious breakfast or snack when you are on the run. We store them in the refrigerator, but will warm them in the microwave for 20 seconds before spreading maple cream or peanut butter on them.
