3 lb Pork Loin
2 oz Liquid from a can of Chipotle Peppers
2 oz Maple Cream
2 oz Mustard
3 tsp Black Pepper
2 tsp Smoked Paprika
1 Tbsp Chili Powder
1 Tbsp Maple Sugar
2 tsp Salt
Preheat oven to 200F.
Combine chipotle liquid, maple cream , and mustard in a small bowl. Smear over pork loin and cover completely.
In another small bowl combine black pepper, smoked paprika, chili powder, maple sugar and salt. Stir.
Coat pork loin. Place in oven and wrap in tin foil when it hits 120F, then continue to cook until pork is at 140F.
