1 1/3 C Flour
4 tsp Baking Powder
2 tsp Maple Sugar
1/2 tsp salt
2 Eggs, separated
1/2 C butter, melted
1 3/4 C Milk
In a large bowl whisk together the dry ingredients (flour, baking powder, salt and maple sugar). Melt the butter and then combine with milk, once combined blend into dry mixture. Separate the eggs adding the yolk to the dry mix and beating the egg whites until stiff. Fold stiff egg whites into mix. Once combined use about 3/4 cup of mix to make each waffle on the preheated waffle iron. Top waffle with powdered sugar, peanut butter, fresh fruit and of course Great River Maple syrup. Recipe makes about 10-12 waffles.
