2 1/2 lbs Sweet Potatoes, peeled and cut
1/2 C Great River Maple Bourbon Aged Maple Syrup
2 TB Butter, unsalted and melted
1/2 Lemon, juiced
Salt, White Pepper & Cayenne to taste
Preheat Oven to 420'
Mix bourbon aged maple syrup, butter, lemon juice, salt, pepper and cayenne. Pour mixture over sweet potatoes and toss to coat. Bake for 15 minutes covered and then uncover and stir every 15 mins until golden and tender.
