1 Zucchini, shredded
2 Tbsp Flour
1 Egg, beaten
1/4 Cup Chopped Parsley
1 Clove of Garlic, minced
2 tsp Maple Sugar
Salt and Pepper
4 Tbsp Maple Marinara
1 Handful Baby Spinach
1/4 Cup Shredded Mozzarella
6 Cherry Tomatoes, cut in half
In a bowl combine the shredded zucchini, flour, beaten egg, parsley, garlic, maple sugar, salt and pepper. Mix well.
Heat a cast iron skillet and lightly grease it. Then spread the zucchini mixture in the pan, put on the lid and cook until the crust is starting to form and become lightly golden brown. Then flip the crust and replace the lid for a few minutes. Then top with maple marinara, spinach, mozzarella and cherry tomatoes. Replace the lid and cook until the cheese is melted and enjoy!
